Coco Libre

2 oz Toasted Coconut Rum

4 oz Pepsi

.25 oz Lime Juice

Combine all ingredients in vessel of choice and garnish with a lime wedge.

Toasted Coconut Rum

10g Coconut for every 6 oz Rum

Lightly toast 10 g (about 1/4 cup) unsweetened coconut flakes in a pan over medium heat until fragrant and a mix of golden brown and some still white (30 sec - 1 min).  Remove from heat and let cool. Once cooled, combine with 6 oz of your white rum of choice in a glass jar or other sealable container and let sit for 48 hours. Strain and return to a jar until you are ready to mix.
