Staycation Fizz

Classically styled Gin Fizz’s with big stiff heads of foam that rise above the rim of the glass have come back in style in a big way. The Ramos leads the charge, but there are endless permutations to this delicious classic template. I chose to riff off of a version I found in Charls H. Barker Jr.’s 1939 book of recipes “Around the world with a jigger, flask, and spoon” that calls for a pineapple syrup addition to a Silver Fizz.

2 oz Ford’s London Dry Gin

1 oz Cran-Pineapple Juice

.25 oz Lemon Juice

.25 oz Lime Juice

.25 oz Simple Syrup

1 Egg White 

3-4 oz Cold Seltzer

Combine all ingredients except soda water in a tin and dry shake.

Add a large cube of ice and shake hard… for a while.

Strain into highball glass and let settle.

Once settled, slowly pour cold soda water from tin until foam rises above the rim of the glass.

Serve with a cranberries on a straw and a pineapple leaf for garnish.
